Get to know a little more about our team! We are a family-owned business with a passion for sharing our love of lobster rolls with all of you.
With a knack for making everyone feel like family, Kim is the heart of Lobster West and is here to make sure customers fall in love with lobster rolls just as much as she did while growing up in New Jersey. Even today, it is her family’s tradition to serve Maine lobster on holidays. Having spent time in New York City as an advertising executive, she moved to Encinitas more than six years ago with her family and quickly adapted to the SoCal lifestyle. She is passionate about making sure that every customer’s experience at Lobster West is positive, memorable and one-of-a-kind. Kim can turn any awkward situation into a happy one – we dare you to try and rattle her!
Born in the Midwest, it’s a toss up whether or not Joel still prefers his meat-and-potatoes to Maine lobster. As the head honcho in this family business, Joel’s financial analyst background and negotiating skills have created a solid foundation for success. Joel’s easy-going nature is the glue that keeps our team together through thick and thin – and also helps him cope with the craziness of raising his three young boys (with Kim)!
Hailing from the Garden State of New Jersey, Chad left behind his beloved Northeast, traversed the countryside and landed in California in 2008. Having spent several years as an east-coast transplant, he is proud to bring a fresh new dining concept to Encinitas, a community that appreciates and embraces originality. Chad’s professional background is a unique blend of restaurant experience and environmental science – equipping him with a consciousness for serving high-quality products with eco-friendly practices and sustainability at the core. When he’s not serving up lobster (and smiles), you might catch him performing his own acoustic-style of music around town.
A New York native, Deborah is a tour de force when it comes to fiscal management, human resources and strategic planning – in other words, she keeps everything ship-shape at Lobster West. Backed with a 30-year career leading a non-profit organization to success, she has also raised a family that loves lobster so much, they’ve turned it in to their full-time gig.In fact, it was Deborah’s craving for Maine lobster rolls after moving out to California that sparked the idea to begin with. Although she’s all-business while working at the restaurant, Deborah’s three young grandsons know her best as their playful Nana.
